Preheat oven to180C / 350F / Gas 4. Grease and line baking tin.
168g clear honey
1 Tbsp water
112g soft brown sugar
196g self-raising flour
Place butter, sugar, honey and water into a saucepan and heat until the fat has melted, stirring alll the time.
When the fat is melted remove pan from heat and allow contents to cool to blood termperature.
Gradually beat in the eggs.
Add sieved flour and mix until smooth. Do not over mix.
Pour mixture into a greased and lined 180mm round cake tin and bake for 1 hour, or until risen and firm to the touch.
